Nose

If Ron Zacapa 23 is the gateway to Guatemalan premium rum, the XO is the destination. Building on the same production philosophy — virgin sugarcane honey distillation, mountain ageing at 2,300 metres, and a solera blending system — the XO takes everything further. The rums in the solera range from six to twenty-five years old, and the final blend receives an additional finishing period in French oak casks that previously held Cognac. The result is a rum of extraordinary opulence.

The extended solera process and the Cognac cask finishing add layers of complexity that the Zacapa 23 only hints at. The cool mountain air continues to slow the ageing process, allowing the spirit to develop gradually rather than being overwhelmed by rapid tropical oak extraction. The Cognac casks contribute a wine-like elegance and dried fruit richness that complements the natural sweetness of the sugarcane honey base.

On the Nose

The nose is decadent — a rich, sweet perfume of toffee, butterscotch, and dark caramel. The Cognac cask influence is immediately apparent, adding notes of dried fig, raisin, and a subtle grape must quality. Dark chocolate and espresso coffee provide depth, while vanilla and honey add further sweetness. There are warm spices — cinnamon, nutmeg, and a hint of clove — along with a faint orangey brightness from the Cognac oak. Leather and tobacco emerge with time, adding a mature, contemplative quality. It is an extraordinarily luxurious nose.

The Palate

On the palate, Zacapa XO is opulent and full-bodied. The entry is rich and sweet, with dark caramel, toffee, and butterscotch in abundance. The Cognac finishing adds a sophisticated layer — dried fruit, grape, and a subtle woody spice that is distinctly French oak. Dark chocolate and coffee are prominent, along with brown sugar and molasses. The mouthfeel is thick and viscous, almost liqueur-like in its richness. Warm spices build through the mid-palate — cinnamon, allspice, and a gentle nutmeg — while a subtle bitterness from the oak provides welcome balance.

The Finish

The finish is very long, with persistent toffee, dark chocolate, and dried fruit. The Cognac oak asserts itself with a gentle tannic dryness that provides structure, while the sweetness gradually recedes to reveal a more complex, spice-led conclusion. There is a final note of espresso and leather that lingers beautifully. It is a finish that rewards patience and silence.

Zacapa XO is emphatically a neat rum — any mixer would be an act of vandalism against some of the most carefully crafted liquid in the spirits world. It is a magnificent after-dinner spirit, a rival to fine Cognac and aged port, and a demonstration of what rum is capable of at the very highest level. Whether the sweetness is to one's taste is a matter of personal preference, but the craftsmanship is beyond question.
