First Impressions
Copalli operates from a single estate in the heart of the Belizean rainforest, using only three ingredients: sugar cane, water, and yeast. The cane juice approach (rather than molasses) gives it an agricole-like freshness, while resting in bourbon barrels adds vanilla and spice. At 44%, it's bottled at a strength that shows the oak influence clearly.
Tasting Notes
The nose shows bourbon barrel influence prominently. Vanilla and cinnamon lead, with nutmeg and rich tobacco adding depth. Sugar cane sweetness provides the foundation, and gentle oak rounds things out.
The palate is sweet and spiced. Vanilla warmth dominates, with cinnamon and nutmeg adding classic bourbon-cask character. Rich tobacco adds a savoury complexity, cane juice sweetness provides a fresh foundation, and oak structure keeps things balanced. The interplay between fresh cane character and bourbon-barrel influence is well-managed.
The finish is medium-long, with vanilla and spice persisting alongside tobacco and a clean cane sugar close.
How to Drink It
Neat or on the rocks — the bourbon barrel character makes it immediately accessible. Also excellent in an Old Fashioned where the cane juice base adds a freshness that molasses-based rums lack.
The Bottom Line
Copalli Barrel Rested earns a 7 — a well-made, single-estate cane juice rum with appealing bourbon-cask influence. At £47, the provenance and purity of ingredients justify the price. Belize continues to produce interesting rum.
