After initial ageing in French oak, the rum is finished for a year in a brand new French Merisier (cherry wood) cask — an unusual choice that imparts a natural cherry character without resorting to artificial flavourings.

The nose reveals the cherry wood influence immediately — sweet cherry notes that are clearly from the cask rather than added flavouring. Vanilla and French oak provide the framework, with dried apricot, floral notes, and gentle spice adding complexity.
On the palate, cherry character runs throughout, giving this rum a unique personality. The cherry wood influence is well-integrated — it enhances rather than overwhelms the base spirit.

Neat or with a single ice cube to let the cherry character bloom. Also makes an outstanding Manhattan variation where the cherry notes complement the vermouth beautifully.

New Grove Merisier earns a 7 — a genuinely creative cask finish that delivers on its promise. At £74.50, it's premium-priced but the uniqueness justifies exploration. Cherry wood finishing in rum is rare, and this is an excellent example of the technique.
